Much like setting resolutions in January, April reminds us to evaluate the toll we take on our planet. Though keeping the Earth healthy is a year-round responsibility, take the time this Earth Month to make ‘going green’ a daily (and life-long) way of living!

Did you know you can eat more sustainably, too? Add earth-friendly ingredients to the grocery list to do better for our planet – starting with mushrooms! Not only are they delicious, mushrooms “can be considered one of the most sustainably produced foods in the United States.*” That’s because they require minimal resources for production:

  • 1.8 gallons of water per 1 pound of mushrooms*
  • 1.0 KWH of electricity per 1 pound of mushrooms*
  • 1 acre produces up to 1 million lbs of mushrooms annually*
  • After harvesting, mushrooms can be recycled back into the potting soil*

Fun(gi) Fact: 1 pound of mushrooms generates only .7 lbs of CO2 equivalents – that’s equal to driving a car one mile!*

#Repost @very_derlicious My latest lunch go-to 🍄Marinated these in some lemon juice, salt, pepper, dill, and broth that I had leftover. Then I pan roasted them on a cast iron skillet for 2 min on the stem side and 5 with the top side down. Not sure the flavors held on enough to make the waiting time and extra dishes for marinating worth it... So the next time I did just the mushrooms by themselves and they were 🤗😋 For lunch I put them on salads or eat them with a little cheese and some sides
