Golden oyster mushrooms and noodles get tossed in a savory, slightly spicy sauce with garlic, sesame and green onions. An easy, flavor-packed meal that comes together fast.

Noodles:
12 ounces fresh noodles, or any noodles of choice
3 tablespoons groundnut oil
1–3 garlic cloves, minced
1 pound oyster mushrooms
Sea salt and ground black pepper, to taste
3–4 spring onions, sliced
Sauce:
1/3 cup light-sodium soy sauce
1/3 cup water
2 tablespoons agave nectar
1 tablespoon Sriracha sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
Optional:
Lemon wedges, to serve with
Sesame seeds, to garnish
Instructions
Cook the noodles according to package directions. Drain and set aside.
In a small bowl or jug, whisk all sauce ingredients.
Heat the groundnut oil in a large skillet over medium-high heat. Add garlic and sauté until fragrant, about 1 minute. Add mushrooms and sauté until golden brown, for about 4-5 minutes, stirring occasionally. Season with a pinch of salt and pepper.
Add the noodles and pour the sauce over.
Stir in the spring onions, and cook over medium heat until the noodles are nicely coated into the sauce and hot, about 1-2 minutes.
Serve garnished with sesame seeds and lime wedges if desired.
