
Fire up the grill, and get big flavor without the mess. Juicy shrimp, andouille sausage, meaty trumpet mushrooms and baby potatoes all come together with Cajun seasoning for a grill dinner that’s as bold as it is effortless.
Ingredients
- 1 pound large raw shrimp, peeled and deveined
- 8 ounces trumpet mushrooms, sliced
- 12 ounces andouille sausage, sliced into coins
- 1 pound baby potatoes
- 1 yellow onion, sliced
- 2 ears of corn, cut into halves or thirds
- 3 cloves garlic, minced
- 2 tablespoon Cajun seasoning (or more to taste)
- Salt & black pepper, to taste
- 4 tablespoon unsalted butter (1 pat per packet)
- 1 lemon, quartered
- 2 tablespoon fresh chopped parsley (for garnish)
- Heavy-duty aluminum foil
Instructions
- Bring a large pot of salted water to a boil. Add baby potatoes and parboil for 5-7 minutes. Drain and set aside.
- In a large bowl, combine the parboiled potatoes, shrimp, sliced trumpet mushrooms, sausage, onion and corn.
- Add minced garlic, Cajun seasoning, salt, and pepper. Toss until everything is evenly coated.
- Tear four large sheets of heavy-duty foil. Spoon about 1/4 of the mixture into the center of each.
- Top each packet with one pat of butter and a squeeze of fresh lemon juice.
- Fold the sides and ends of the foil in tightly to seal.
- Preheat grill to 400°F. Place foil packets on the grill and cook for 10 minutes per side (20 minutes total).
- Carefully open packets (Watch for steam!), and sprinkle with fresh parsley before serving.
