- 1 lb ground beef (80/20 recommended)
- 4 oz crimini mushrooms, finely chopped
- 2–3 dashes Worcestershire sauce
- Salt & pepper, to taste
- 1 yellow onion, thinly sliced
- 1 stick butter (divided, for onions, buns and griddle)
- 4 slices Swiss cheese
- 4 burger buns
- Garlic aioli (store-bought or homemade)
Instructions
- Finely chop the mushrooms and combine them with the ground Add Worcestershire sauce, season with salt and pepper and mix gently. Divide mixture into 4 portions and gently roll into balls.
- Preheat griddle to medium Spread 3 tablespoons of butter on one side of the griddle and add onions. Cook until golden and caramelized, then push to the cooler side to keep warm.
- Spread a thin layer of butter on the buns and place cut side down on the Toast for 1–2 minutes, flip, toast briefly, then remove.
- Add butter to the hot griddle, place the burger balls down and smash flat using a burger press. Cook until crispy on the edges, 2–3 minutes per side. Top each patty with Swiss cheese during the last minute to melt.
- Spread a heaping spoonful of garlic aioli on the bottom Add the mushroom-blended patty, top with caramelized onions and place the top bun on.
- Enjoy hot, straight from the griddle.
