Grill up a quick and delicious Shiitake mushroom flatbread pizza featuring creamy cheese and tender chicken for a satisfying meal.

- 1 ball of pizza dough (store-bought or homemade)
- 4 tablespoons cream cheese, softened
- 2 cups shredded mozzarella cheese
- 1 cup cooked shredded or chopped chicken
- 1/4 cup thinly sliced red onion
- 6 ounces fresh shiitake mushrooms, sliced
- 1–2 tablespoons olive oil
- Salt & pepper, to taste
- Optional: fresh chopped parsley & grated parmesan for garnish
Instructions
- Preheat grill to medium-high.
- Roll or stretch dough into a flatbread shape. Lay directly on grill grates. Cook 2 minutes per side or until firm and lightly charred. Remove from grill.
- Spread cream cheese evenly over the grilled crust. Top with mozzarella, chicken, red onion and sliced shiitakes.
- Drizzle the toppings with olive oil and season lightly with salt and pepper.
- Return the flatbread to the grill. Close the lid and cook for 6-8 minutes, until the cheese is melted and mushrooms are tender.
- Remove from grill, then sprinkle with parsley and grated parmesan if desired. Slice and serve hot.
