Grill up a quick and delicious Shiitake mushroom flatbread pizza featuring creamy cheese and tender chicken for a satisfying meal.

Ingredients

  • 1 ball of pizza dough (store-bought or homemade)  
  • 4 tablespoons cream cheese, softened  
  • 2 cups shredded mozzarella cheese  
  • 1 cup cooked shredded or chopped chicken  
  • 1/4 cup thinly sliced red onion  
  • 6 ounces fresh shiitake mushrooms, sliced  
  • 12 tablespoons olive oil  
  • Salt & pepper, to taste  
  • Optional: fresh chopped parsley & grated parmesan for garnish  

Instructions

  1. Preheat grill to medium-high. 
  2. Roll or stretch dough into a flatbread shape. Lay directly on grill grates. Cook 2 minutes  per side or until firm and lightly charred. Remove from grill. 
  3. Spread cream cheese evenly over the grilled crust. Top with mozzarella, chicken, red  onion and sliced shiitakes. 
  4. Drizzle the toppings with olive oil and season lightly with salt and pepper. 
  5. Return the flatbread to the grill. Close the lid and cook for 6-8 minutes, until the cheese  is melted and mushrooms are tender. 
  6. Remove from grill, then sprinkle with parsley and grated parmesan if desired. Slice and serve hot.

Shiitake mushrooms sport a rich, woodsy flavor that intensifies when cooked, lending a savory umami flavor to every dish in which they star. They have a dense, meaty texture and stems that range from tender to fibrous. Tough stems should be removed and saved for use in soups and stocks.
