Golden, melty grilled cheese meets roasted portabella mushrooms and tangy kimchi for a bold, flavor-packed twist. It’s an easy way to elevate a comfort food favorite with minimal effort.
Ingredients
2 portabella mushroom caps, cleaned, stemmed and gills left intact
1 tablespoon olive oil
Kosher salt and freshly ground black pepper, to taste
4 slices sourdough bread or white sandwich bread
1/2 stick unsalted butter, room temperature
4 slices cheddar cheese
1/4 cup store-bought kimchi, chopped
Instructions
- Preheat oven to 425°F and line a rimmed baking sheet with parchment paper. Place mushrooms, gill-side-up, on the prepared baking sheet. Brush both sides of mushrooms with oil and season with salt and pepper, to taste.
- Roast mushrooms until light golden-brown and tender, about 12 to 15 minutes, depending on the size of the mushrooms. Set the mushrooms aside to cool slightly, allowing them to reabsorb their liquid.
- Heat a large skillet over medium heat. Generously butter one side of each slice of bread with 1 tablespoon butter.
- Place 2 slices of bread, buttered-side-down, in skillet. Spread roughly 2 tablespoons of kimchi evenly over each slice of bread. Top evenly with 1 slice of cheddar, then 1 roasted mushroom, followed by another slice of cheddar. Place the remaining bread slices on top, buttered-side-up.
- Cook on each side until golden-brown, about 2 minutes per side. Serve and enjoy.

Tip: Instead of roasting the portabellas, you can slice and cook them in a large pan over medium-high heat with 2 tablespoons of oil, until tender and light golden-brown, about 5 to 6 minutes.
