Light up the grill and give classic stuffed mushrooms a bold upgrade with Smoked Cajun Sausage & Cream Cheese Stuffed Portabellas. The combination of smoky sausage, rich cream cheese and hearty mushrooms makes for a savory backyard BBQ favorite.
Ingredients
- 6 large portabella mushrooms
- 1 lb. pork sausage
- 1/2 yellow onion, finely diced
- 2 cloves garlic, minced
- 2 T. Cajun seasoning
- 8 oz. cream cheese, softened
- 1 c. shredded cheddar cheese
- 1/4 c. grated parmesan cheese
- 2 T. fresh parsley, chopped (for garnish)
- Salt & pepper, to taste
Instructions
- Preheat pellet grill to 350°F.
- Clean mushrooms by removing stems and scraping out gills.
- In a skillet, cook sausage with diced onion until browned. Add garlic and cook for one more minute. Then, stir in Cajun seasoning.
- Remove from heat and mix with cream cheese, cheddar cheese and parmesan cheese until well combined.
- Spoon mixture evenly into mushroom caps.
- Place mushrooms on grill grates and smoke for 25-30 minutes, until mushrooms are tender and tops are golden.
- Garnish with chopped parsley and serve hot.
