Whenever I grill sliced mushrooms for my burgers and steaks, they always seem to fall through the grate and into the charcoal.
Depending on how you slice them, mushrooms can sometimes fall through the grill. Here are a few easy tips to keep that from happening!
Smaller Varieties (e.g., White Button, Crimini, Shiitake): These mushrooms are great for skewers. Marinate them first for extra flavor, then thread onto skewers or kebabs. Lightly oil the grill grates to prevent sticking, and cook directly over the heat, rotating the skewers to ensure even grilling on all sides.
Larger Varieties (e.g., Portabella, King Trumpet): These hearty mushrooms can go straight on the grill without skewers since they’re large enough not to fall through the grates. Marinate or brush them with oil beforehand to boost flavor and prevent drying out.
Delicate Varieties (e.g., Oyster, Maitake): Because of their fragile structure, these mushrooms are best grilled on skewers or in a grill basket to avoid losing pieces through the grates. A light oil coating will also help them brown nicely.
Lion’s Mane: Slice into thick steaks—about ¾ inch—from top to base. Sear the slices in a cast iron pan to develop a crust, then transfer them directly to the grill to finish. This method enhances texture and locks in flavor.
