Ground beef and hearty shiitake mushrooms make this noodle bowl extra satisfying, all coated in a sweet, savory and slightly spicy sauce.

- Sauce:
- 1/4 cup honey
- 1/2 cup light-sodium soy sauce
- 1–3 teaspoons sriracha
- 1 tablespoon rice vinegar
- 1 tablespoon ginger, minced
- 1–2 cloves garlic, minced
- 2 1/2 teaspoon cornstarch
- Noodles:
- 2 tablespoons groundnut oil, divided
- 12 ounces ground beef
- 4 green onions, sliced with white and green parts separated
- 1 pound shiitake mushrooms, thickly sliced
- 6 ounces noodles
- Garnish:
- 1 teaspoon sesame seeds, to garnish
Instructions
- In a small bowl, whisk well all sauce ingredients.
- Cook the noodles according to package directions, then drain and set aside.
- In a large skillet, heat 1 tablespoon of the groundnut oil. Add the beef and cook, breaking the meat with a wooden spatula, until cooked through, about 6-8 minutes. Set aside on a plate and cover to keep warm.
- In the same skillet, add the remaining tablespoon of oil. Fry the white parts of the onions together with the shiitake mushrooms, until tender and lightly golden. Add in the sauce and stir reaching the bottom of the pan to deglaze it. Simmer for a couple of minutes until it begins to thicken. Stir in the ground meat and cooked noodles. Toss over medium-low heat until nicely coated and hot.
- Garnish with sesame seeds and serve.
