Golden oyster mushrooms and noodles get tossed in a savory, slightly spicy sauce with garlic, sesame and green onions. An easy, flavor-packed meal that comes together fast.

- Noodles:
- 12 ounces fresh noodles, or any noodles of choice
- 3 tablespoons groundnut oil
- 1–3 garlic cloves, minced
- 1 pound oyster mushrooms
- Sea salt and ground black pepper, to taste
- 3–4 spring onions, sliced
- Sauce:
- 1/3 cup light-sodium soy sauce
- 1/3 cup water
- 2 tablespoons agave nectar
- 1 tablespoon Sriracha sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- Optional:
- Lemon wedges, to serve with
- Sesame seeds, to garnish
Instructions
- Cook the noodles according to package directions. Drain and set aside.
- In a small bowl or jug, whisk all sauce ingredients.
- Heat the groundnut oil in a large skillet over medium-high heat. Add garlic and sauté until fragrant, about 1 minute. Add mushrooms and sauté until golden brown, for about 4-5 minutes, stirring occasionally. Season with a pinch of salt and pepper.
- Add the noodles and pour the sauce over.
- Stir in the spring onions, and cook over medium heat until the noodles are nicely coated into the sauce and hot, about 1-2 minutes.
- Serve garnished with sesame seeds and lime wedges if desired.
