For the smart and innovative home chef, beech mushrooms can be wildly versatile. When cooked just right, these beauties have a nutty but slightly sweet flavor. Throw them into soups, sauces and stir-fries. Let your imagination run wild!

Pisces

Pisces, February 19 – March 20 | Oyster

Pisces have a strong intuition and tend to focus on their inner journey. Just like the oyster mushroom, they can be delicate and a little mystical. In 2020, you will overcome your fear of failure (of trying new mushrooms) and find personal and professional success.

When cooked, oyster mushrooms have a mild, savory almost seafood-like flavor. Sauté them with butter and garlic and add them to your favorite pasta dish. Perfect for a cozy night in.

Aries

Aries, March 21 – April 19 | Portabella

In 2020, years of hard work and dedication will come to fruition. Opportunities will come at you quickly, so don’t forget to stay grounded (...in dirt, like mushrooms). This will be a powerful year if you continue to take the initiative and keep your eyes on the prize.

Just like you, portabellas are big and bold. They are incredibly flavorful and versatile, perfect for the adventurous cook. Grill them with olive oil and herbs or make a hearty stuffed mushroom.

Taurus

Taurus, April 20 – May 20 | Crimini

2020 will be a joyful and steady year full of love, family and new mushroom recipes. You often put others first and are looked to as a reliable and trusted friend. 

Dependable and strong, crimini mushrooms can be found in virtually every grocery store and can be used in any dish that calls for mushrooms. They add a deep, earthy flavor and can adapt to any environment they are thrown into. 

Gemini

Gemini, May 21 – June 20 | Yellow Oyster

In 2020, things will finally start to go your way. Think of it as a fresh start where anything is possible. Use your intelligence and creativity to figure out what you really want out of life (or what new mushroom recipes you want to try) and begin to lay the foundation to get there. 

Yellow oysters are versatile and vibrant and add a fun flare to dishes. Sauté them with butter and pile them onto crostini for an impressive appetizer at your next party.

Yellow oysters may not be easy to find, so feel free to swap with any oyster mushroom you can find at your supermarket. We used gray oysters in this recipe! 

Cancer

Cancer, June 21 – July 22 | Enoki

In 2020 you will learn what you need out of life through helping others. You are highly in touch with your emotions and approach new experiences with caution, but don’t let that deter you from trying delicious new mushroom varieties.

Enoki mushrooms are very sweet and mild when cooked. More conservative than their oyster and maitake friends, enoki mushrooms are perfect for those cozy dishes that help you relax after a stressful day like soups and stews.

Leo

Leo, July 23 – August 22 | Maitake

2020 will be a year full of surprises. You will get out of your routine, travel to new places and experiment with adventurous mushroom recipes.

The maitake, known as “the dancing mushroom” in Japanese, is expressive and unique. They have a delicate, feathery texture and the edges crisp up when cooked. Next time you’re in the mushroom aisle, try something new and fun and reach for the maitake.

Virgo

Virgo, August 23 – September 22 | Shiitake

This is the year to crack down and focus on your goals. You are practical, a perfectionist and detail oriented.

Just like you, shiitake mushrooms don’t mess around. They have an intense, earthy flavor that is perfect for your grounded soul. They may seem modest at first, but they have a strong punch of umami and can be trusted to accent any dish, such as vegetables, meat, seafood and poultry.

Libra

Libra, September 23 – October 22 | The Blend™

Scorpio, October 23- November 21 | Trumpet

The trumpet, also known as the king oyster for its large size, may seem intimidating at first, but once you get familiar with it, the trumpet will be your new go-to. The wide stems can be sliced lengthwise and crisped up like “bacon” or can be cut across into thicker discs and braised like scallops. When cooked, they have a powerful umami flavor.

Sagittarius

Sagittarius, November 22 – December 21 | Pink Oyster

In 2020 you will learn to let go of the past and focus on your future. You will start to care less about what people think about you and focus on the finer things in life - like mushrooms.

Dreamy and eye-catching, pink oysters are definitely the most whimsical of the oyster family. Similar to their yellow and pearl siblings, they have a soft texture and a mild flavor that goes with any dish that calls for mushrooms. They don’t have as long of a shelf life as some of the more conventional varieties, but the reward is worth the risk!

Pink oysters may not be easy to find, so feel free to swap with any oyster mushroom you can find at your supermarket. We used gray oysters in this recipe!

Capricorn

Capricorn, December 22 – January 19 | White Button

2020 will be a calm year for Capricorns. You will learn to prioritize your needs and take breaks when necessary. Don’t worry about what’s out of your control and look at every new experience as an opportunity to grow - like mushrooms, which double in size each day.

Classic and loyal, white button mushrooms are always there when you need them. As one of the most common mushroom varieties, you can depend on a white button to be at your local grocery store, ready for whatever recipe you have in mind. They are firm, hearty and will hold up to any bold flavor you impart on it.
